Baingan cheese bharte ka kulcha(brinjal cheese bharta kulcha)

Ingredients:
  • 300gm plain flour(Maida)
  • 200gm oil
  • 100gm curd(rahi)
  • Backing soda
  • 250gm brinjal small pieces(beingan)
  • Cumin seeds(jeera)
  • Red chili powder 1 teaspoon
  • Coriander powder 2 teaspoon(dhania powder)
  • Garam masala powder
  • 4 green chilies
  • Chopped garlic chopped(Lejeune)
  • Chopped ginger(adrak)
  • Black salt
  • Onion chopped
  • Cheese
  • Half tomato
  • Garam masala 1 teaspoon
  • Asafetida (hing)
Procedure:
  • In a bowl mix plain flour, baking soda, citric acid, 100gm oil.  Knead to a soft dough.
  • Keep this dough for rest for 9 hours.
  • Heat 4 teaspoon of oil and add cumin seeds.
  • Add green chilies, ginger and garlic cook for a minute.  Add onion and cook for some time.  Add tomato, red chili powder, coriander powder, asafetida, garam masala, black salt.
  • Now add brinjalas and cheese. Mix well, add some water and cook for 10 to 15 minutes on low flame and mash the bharta once cooked.  
  • Then mix well for 2 minutes and switch off the gas 
  • Now add oil to dough and knead it very well.   Make 8  to 9 flat balls and fill baigan bharta into it.  Now gently give flat round shape with your hands.  You can also roll the kulcha.  Heat 1 teaspoon of oil in a pan and roast the kulchas until crisp from both sides. Serve with tomato ketchup or curd.
