Dawat e rice

Ingredients:
  • Basmati rice 250gm
  • curd 125gm
  • 4 onions sliced
  • 2 potatoes diced
  • kashmiri red chili powder 2 teaspoon
  • all spice powder 2 teaspoon
  • 2 star anise
  • 2 maice
  • 2 cinnamon sticks
  • 8 black pepper corns
  • turmeric powder
  • 5 teaspoon of ghee
  • salt
  • fried onions
  • 3 bay leaves 
  • ginger garlic green chili paste 2 1/2 teasppon
  • Asafoetida
  • Turmeric powder
Procedure:
  • Roast onion slices until become brown.  Grind onions to a fine paste.
  • Marinate potato dices with kashmiri red chili powder, salt and some ghee.
  • Wash rice and half cook with water, maice, cinnamon, bay leaves, black pepper corns, star anise, turmeric powder.
  • Heat 5 teaspoon of ghee in a handi.  Add garlic, ginger, green chili paste.
  • Now add onion paste.  Cook for 2 minutes.  Add potato, curd, salt mix well.
  • Now add kashmiri red chili powder, asafoetida, all spice powder.  
  • Remove bay leaves, cinnamon sticks, star anise from rice and add them to handi.
  • Cover the handi and cook until ghee spreds on surface.  
  • Now spread half cooked rice, fried onions on top and again cover the handi and cook for 10 minutes.
  • Garnish with coriander leaves and fried onion.
