Bhoona kaddu (roasted pumpkin)

Ingredients:
  • Pumpkin diced 250gm (kaddu)
  • Coriander powder 1 teaspoon
  • Red chili powder 1/2 teaspoon
  • Kashmiri red chili powder 1 teaspoon
  • Black salt 
  • Dry mango powder
  • Curd 
  • Soy sauce
  • Oil
  • Salt
  • Onion garlic masala (kanda lasun masala)
  • Farsan (easily available in super markets)
Procedure:
  • Rub red chili powder, kashmiri red chili powder, coriander powder, black salt to pumpkin dices.
  • Heat 3 teaspoon of oil in the pan.  Add marinated pumpkin, soy sauce and cook on high flame for 3 minutes.
  • Add curd, dry mango powder and onion garlic masala.  Cover the pan cook for 15 to 17 minutes until pumpkins become soft and turns into reddish brown in color.
  • Spread farsan on the top, serve hot.
