Kaddu Burrito (pumpkin burrito)

A burrito is a Mexican dish consisting of a large wheat flour tortilla with a filling, wrapped into a closed-ended cylinder. The flour tortilla is sometimes lightly grilled or steamed to soften it.
In Mexico, meat and refried beans are sometimes the only fillings. In the United States, burrito fillings may include a combination of ingredients such as Mexican-style rice or plain rice, beans or refried beans, lettuce, salsa, meat, guacamole, cheese, sour cream and various vegetables. Burrito size varies.
 We are going to make our burrito in indian style with pumpkin filling.  We will use Indian whole wheat bread also called as roti, chapati.  Potatoes, tomatoes and off course spices without it no joy.

Ingredients:

For kaddu filling:
  • grated pumpkin 250gm (kaddu)
  • carom seeds (ajwain)
  • red chili powder (lal mirch powder)
  • all spice powder (sabhi masala powder)
  • asafoetida (Hing)
Other ingredients:
  •  2 medium onions chopped 
  •  4 boiled potatoes (aalu)
  •  2 medium tomato chopped 
  •  tomato ketchup
  •  black salt (kala namak)
  •  green chutney (hari chutney)
  •  curd (dahi)
  •  red chili powder (lal mirch powder
  •  black pepper (kali mirch powder)
  •  cheese (if you require)
  •  chapatti or roti or corn tortilla
  •  salt 
  •  oil
Procedure:
  • Heat oil in a pan and add asafoetida stir for 2 seconds then add red chili powder, all spice powder. 
  • Add carom seeds, grated pumpkin and sauté the mixture for 8 to 9 minutes.
  • Take one bowl and mix onions, tomatoes, mashed potatoes, black salt and black pepper powder.
  • Now spread tomato ketchup on chapatti then add potato onion mixture, pumpkin mixture.
  • Add some green chutney and cheese on the top.
  • Heat 1 teaspoon of oil in a pan and roast the burrito until both sides of it gets crisp. 
  • Your Indian style burrito is ready.
Recipe Instructions:

Do not squeeze the grated kaddu.
