- bitter gourd 250 gm
- 8 potato boiled
- black salt
- coriander powder
- 2 onions chopped
- black pepper powder
- red chili powder
- dry mango powder
- salt
- corn flour
- oil
- garam masala powder (any five spice)
- semolina
- Cut the bitter gourds and make hollow cylindrical shapes. Boil them with water and salt.
- Mix potatoes with chopped onions, coriander powder, black pepper powder, black salt, garam masala.
- Now fill this mixture into hollow bitter gourds cylinder.
- Now in the same potato mixture add red chili powder, dry mango powder, corn flour, black salt if needed.
- Now coat the bitter gourds with this mixture like eggs. Now coat them with semolina.
- Heat oil in a thick bottom sauce pan.
- Now deep fry these vegan eggs into the oil on a low flame until very crisp. Cut karela potato jackets into two halves. Garnish with coriander leaves and red chili powder.
- Serve this with bread or you can also eat it like a snack with tomato ketchup.
