Karela potato jacket

Ingredients:
  • bitter gourd 250 gm
  • 8 potato boiled
  • black salt
  • coriander powder
  • 2 onions chopped
  • black pepper powder
  • red chili powder
  • dry mango powder
  • salt
  • corn flour
  • oil
  • garam masala powder (any five spice)
  • semolina 
Procedure:
  • Cut the bitter gourds and make hollow cylindrical shapes.  Boil them with water and salt. 
  • Mix potatoes with chopped onions, coriander powder, black pepper powder, black salt, garam masala.
  • Now fill this mixture into hollow bitter gourds cylinder.  
  • Now in the same potato mixture add red chili powder, dry mango powder, corn flour, black salt if needed. 
  • Now coat the bitter gourds with this mixture like eggs.  Now coat them with semolina.
  • Heat oil in a thick bottom sauce pan. 
  • Now deep fry these vegan eggs into the oil on a low flame until very crisp.  Cut karela potato jackets into two halves.  Garnish with coriander leaves and red chili powder.  
  • Serve this with bread or you can also eat it like a snack with tomato ketchup.
