Veg Pandhra

Ingredients:
  • Yam 250gm (suran)
  • 1 potato diced
  • 5 green chilies
  • 6 black peppercorns 
  • 4 star anise
  • 3 teaspoon poppy seeds
  • 6 teaspoon grated dry coconut
  • 6 cashew nuts
  • 6 cloves
  • 1 teaspoon cumin seeds
  • 5 green cardamom
  • 1 teaspoon black pepper powder
  • 1 large onion chopped
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • asafoetida
  • sesame seeds
  • 2 mace
  • salt
  • oil
  • ghee
  • double roties
Procedure:
  • Make medium dices of yam.  Grind coconut, sesame seeds, poppy seeds, cashew nuts with some water and make fine paste.
  • Heat 3 teaspoon of oil in a sauce pan.  Add cumin seeds stir for a while.
  • Add onions,  garlic paste, ginger paste, cinnamon sticks, black peppercorns, mace, star anise, black peppercorns.  
  • Cook for 3 minutes.  Now add potato, green cardamoms, asafoetida, green chilies, salt, water and cook for another 5 minutes.  
  • Now add yam, prepared paste, water and mix well.  Add black pepper powder.  Cover the pan and cook for 20 minutes.  Roast double rotis in ghee. 
  • Garnish Veg Pandhra with coriander leaves and green chilies.  Serve hot.
