- Bitter gourds 4
- Potatoes 4
- Onion 1 chopped
- Coriander leaves
- Mustard seeds
- Turmeric powder
- schezwan sauce
- Green chilies 4
- Asafoetida
- Salt
- Oil
- Heat 2 of tablespoon of oil in a pan. Add mustard seeds. Once crackles, add green chilies cook for a while.
- Add onion, mix well. Add tumeric powder and cook for 3 to four minutes.
- Mash potatoes and add it to pan. Mix well, add coriander leaves and cook for 2 minutes. Keep this veggie aside.
- Make 3 hollow pieces of each bitter gourds and boil them. Remove excess water.
- Now fill the potato mixture into bitter gourd pieces.
- In a kadai heat some oil and roast the bitter gourd pieces from all the sides.
- Remove them into plate. Now add some schezwan sauce and toss the roasted bitter gourd pieces into it for 2 minutes. Your karoloo is ready, garnish with coriander leaves and serve hot.
