Ingredients:
  • Bitter gourds 4
  • Potatoes 4
  • Onion 1 chopped
  • Coriander leaves
  • Mustard seeds
  • Turmeric powder
  • schezwan sauce
  • Green chilies 4
  • Asafoetida
  • Salt
  • Oil
Procedure:
  • Heat 2 of tablespoon of oil in a pan.  Add mustard seeds.  Once crackles, add green chilies cook for a while. 
  • Add onion, mix well.  Add tumeric powder and cook for 3 to four minutes.
  • Mash potatoes and add it to pan.  Mix well, add coriander leaves and cook for 2 minutes.  Keep this veggie aside.
  • Make 3 hollow pieces of each bitter gourds and boil them.  Remove excess water. 
  • Now fill the potato mixture into bitter gourd pieces.
  • In a kadai heat some oil and roast the bitter gourd pieces from all the sides. 
  • Remove them into plate.  Now add some schezwan sauce and toss the roasted bitter gourd pieces into it for 2 minutes.  Your karoloo is ready, garnish with coriander leaves and serve hot.
